It enhances dishes with freshwater fish such as perch fillet and pairs equally well with various cheese dishes like raclette and fondue. And, of course, it is an essential choice as an aperitif wine.
The first thing any wine lover notices when looking at the bottle of Molignon is the bold lettering. Designed by an artist, it is a tribute to Diego Mathier's grandfather, Oskar Mathier.
Above the text hangs a bell in the top left, symbolizing Valais' oldest friend: the Foehn wind. This constant companion in Valais gently caresses the grapes, enhancing sugar formation in the must. When the bells of the Fertility Chapel in Molignon ring, it is a sure sign that another outstanding vintage is maturing.
Brilliant color with golden reflections in the glass. The Fendant Molignon presents itself on the palate as balanced, fruity, and dry, with a mineral note and a supporting, elegant acidity.
The sun-drenched harvest is characterized by high volume and mild acidity. Alcoholic fermentation with malolactic fermentation takes place traditionally in stainless steel tanks.
Fendant Molignon is grown in the village of Molignon, located above the Valaisan cantonal capital of Sion. The soil is characterized by a high slate content, which guarantees the minerality and fruitiness of the Molignon. Thanks to the south-facing slopes, the vines are protected from frost and can enjoy extended sunlight even in the late evening.
