This rosé is a versatile companion, seamlessly complementing dishes from appetizers to dessert. In a restaurant setting, it delights both fish and meat enthusiasts, allowing them to enjoy the same wine. It also pairs wonderfully with grilled meats, poultry, or exotic cuisine.
In 1559, Blaise Junod, then Governor of Valangin, commissioned the construction of Château d’Auvernier. In 1603, the estate was acquired by Pierre Chambrier, a prominent figure of his era. The purchase also included a vineyard spanning 19 fossuriers (approximately 7 hectares), which remains the core of the estate to this day.
For over 400 years, Château d’Auvernier has been owned by the same family. During this time, the winery has produced wines of exceptional quality, widely recognized both in Switzerland and internationally. Despite a turbulent history shaped by influential figures such as military leaders, regents, and statesmen, winemaking has remained the soul and central purpose of the estate.
This vibrant wine, with its delicate salmon hue, fully showcases the flavors of Pinot Noir and delights with a subtle strawberry aroma.
The grapes for this rosé are carefully handpicked between late September and early October. Made exclusively from Pinot Noir, the wine ferments over 15 to 18 hours. The fermentation temperature is maintained at a steady 22°C through precise heat regulation. Instead of heavily extracting the berries, they undergo maceration for 12 to 14 hours.
The Neuchâtel wine region, located in the geological continuation of Burgundy, offers perfect conditions for cultivating Pinot Gris. The vines flourish on a terroir with shallow to moderately deep limestone soils and a low clay content.
