Excellent with beef fillet with pepper sauce, braised veal cheeks or duck with red wine jus. A strong hard cheese such as Comté or Cantal also emphasises the expressiveness of the wine.
Château Laffitte Carcasset was founded in 1759 and bears the name of its then owner, Jean Laffitte, a royal prosecutor in Bordeaux. With its elegant 18th-century chartreuse, the estate is located in the heart of Saint-Estèphe, surrounded by Grands Crus Classés. Today it is owned by Pierre Rousseau and combines tradition with modern winemaking.
Laffitte Carcasset wines combine the typical structure of Saint-Estèphe with elegance: aromas of cassis, blackberry and cherry, underpinned by spicy and slightly smoky notes. Powerful on the palate, with ripe tannins and lively freshness, they show balance, clarity and a finely mineral finish.
The grapes are processed by plot. After fermentation in stainless steel and concrete tanks with gentle extraction, the wine is aged for around 12 months in oak barrels, around 40% of which are new. This careful ageing emphasises both the fruit and the structure.
The 35-hectare estate is located on the gravelly plateaus of Saint-Estèphe, near the Gironde. The soils consist of Garonne gravel and clayey-calcareous layers, which provide ideal drainage. The average age of the vines is around 30 years; Cabernet Sauvignon and Merlot are the main varieties grown, supplemented by Cabernet Franc.
