The Refined Spirit

Chablis 1er Cru

AOC Vaillons
Great wines derive their impact not from opulence, but from precision. The Chablis 1er Cru combines the cool clarity of Northern Burgundy with ripe fruit and impressive length. An aromatic Chardonnay that does not merely describe its origin, but makes it tangible with every sip.

Culinary recommendation
chevron-down

An excellent accompaniment to fish, seafood, white meat and creamy sauces. It pairs particularly well with pan-fried turbot in beurre blanc, scallops, chicken in a cream sauce or mature goat’s cheese.

Wine history
chevron-down

The history of J. Moreau & Fils began in 1814, when the cooper Jean-Joseph Moreau married the daughter of a Chablis winegrower and took over one of the village’s oldest wine houses. He developed the business into a major producer in the region. Today, the house is internationally renowned for its terroir-driven Chardonnays, which precisely express the diverse soils and vineyards of Chablis.

Tasting note
chevron-down

Pale golden yellow. On the nose, ripe peach, apricot and citrus fruits are evident, accompanied by floral, menthol and distinctly mineral notes. On the palate, the wine is fresh, concentrated and well-structured, with juicy fruit, a delicate creaminess and a long finish characterised by grapefruit and salty minerality.

Vinification
chevron-down

Alcoholic fermentation takes place under temperature control to preserve the Chardonnay’s freshness and fruitiness. Depending on the Premier Cru parcel, the wine is matured in stainless steel tanks or, in some cases, in oak, and refined on the fine lees for several months.

Vineyards

The grapes come from classified Premier Cru vineyards on both sides of the River Serein around Chablis. Limestone-rich Kimmeridgian soils containing fossilised mussel shells, combined with the cool climate, characterise the wine’s pronounced minerality, freshness and length.
