Veal, pork, poultry, and aged cheese are ideal companions. They harmonize particularly well with a Valais-style schnitzel – a pork cutlet enhanced with apricots and raclette cheese.
Salgesch still proudly bears the Maltese cross in its coat of arms. In the Middle Ages, clergymen settled in Valais, following their vow by offering hospitality and medical care to travelers, the sick, and those in need. Thanks to generous donations from the local population, the order was able to perform remarkable deeds.
The winemakers of Salgesch supported the Hospitallers by providing them with wine. These noble wines were stored in large wooden barrels in the cool cellars of the hospice. At the time, the village well water was often contaminated, so the Hospitallers relied on pure wine to restore the strength of weary travelers and the sick. It's no surprise that the quality of this wine soon became famous far beyond the Simplon.
The wines of the "Hospices de Salquenen" line, created by Diego Mathier, winemaker of the decade, are a delightful tribute to the unmatched dedication of the Hospitallers, a legacy that Salgesch remains proud of today.
In the glass, it displays an intense ruby-red color. The pronounced bouquet evokes ripe forest berries. On the palate, it is smooth and fruit-forward, with soft tannins completing this ready-to-drink Pinot Noir. It is already well-balanced right after bottling.
A short maceration to preserve the valuable fruit flavors and extract only a small amount of tannin. This is followed by traditional vinification in stainless steel tanks.
