Ideal with delicate, lightly seasoned meat dishes: veal fillet with morel jus or pigeon with truffle jus. Equally harmonious are porcini mushroom risotto or tagliatelle with black truffle, where the elegance of this French wine echoes the earthy aromas without overpowering them.
Cheval Blanc was created in the 19th century from parcels that once belonged to Figeac and early on developed its own style with a high proportion of Cabernet Franc. In 1954, the château was classified as a Premier Grand Cru Classé A; since the late 1990s, new owners have ushered in a phase of renewal. Christian de Portzamparc's striking winery symbolises the desire to combine tradition and avant-garde precision.
Across vintages, Cheval Blanc has aromas of dark and red fruit – cassis, cherry, plum – along with violet, cedar wood and a hint of graphite. On the palate, it displays cool, precise freshness, very fine-grained, ripe tannins and a silky texture. The tension carries far into the long finish, where notes of cocoa, tobacco leaf and a fine, chalky-salty vein linger.
Hand-picked by plot and vinified in temperature-controlled concrete tanks, gentle extraction. Subsequently aged in predominantly new French barriques for around 16–18 months before the final blend is made.
