Ideal with slow-cooked veal breast with polenta or Duroc pork with mustard jus. Also surprisingly good with mushroom tart or lentil ragout with roasted celery – the wine pairs equally well with meat and vegetables.
Château de Fonbel belongs to the Vauthier family, who also own the legendary Château Ausone. The estate is located slightly south of Saint-Émilion and is managed with the same meticulous care: biodynamically inspired, crafted by hand, with a focus on balance and purity of fruit. Alain and Pauline Vauthier maintain a style here that brings the soil, climate and plants into perfect harmony.
Juicy blackberry, ripe plum and a hint of herbs, violets and tobacco. Full-bodied but silky on the palate, with elegant freshness, fine tannins and a cool, stony note on the finish. A wine that impresses with its structure, balance and unassuming depth.
Hand-picked and carefully sorted. Fermentation in concrete tanks by plot, followed by 12–14 months of ageing in French barriques, some of which are new. The aim is to produce a wine with clear fruit and a fine texture, without excessive wood.
