Excellent with rack of lamb with rosemary, beef Wellington or pigeon with truffle jus. Also ideal with braised dishes such as veal cheeks or risotto with porcini mushrooms. Its depth and tension make it the perfect partner for aromatic, structured cuisine.
Château Quintus was founded in 2011 by Domaine Clarence Dillon, the house behind Château Haut-Brion and La Mission Haut-Brion. The name refers to the Roman origins of the region, when Saint-Émilion was still called ‘Fifth Hill’ – Quintus. The estate combines two traditional terroirs on the south-western slope of the appellation, whose vineyards are partly over 100 years old. Since its foundation, great precision has been applied to establishing Quintus as a modern benchmark for elegance and expressiveness in Saint-Émilion.
Château Quintus displays a deep purple colour with violet reflections. The nose reveals dark fruit – plum, cassis and black cherry – combined with subtle hints of tobacco leaf, violet, cocoa and graphite. Dense, clear and supple on the palate, supported by ripe, polished tannins. The fruit remains precise, the structure silky, the finish long, with fine mineral freshness and discreet spice.
Hand-picked in small crates, selected by plot and vinified in temperature-controlled stainless steel tanks. Fermentation is slow with gentle extraction to preserve texture and freshness. The wine is then aged for around 18 months in French barriques, some of which are new, to refine its depth and balance.
