Perfect with braised lamb with herbs, entrecôte Bordelaise or game dishes such as venison ragout. A mature Comté or a spicy blue cheese also harmonise wonderfully with the richness and structure of this vintage.
Château Sainte Colombe is located on a plateau that is considered the highest elevation in the Côtes de Castillon. The 40-hectare vineyard has clay and limestone soils with excellent drainage – ideal conditions for precise ripening. The domaine was only established in 1999 under the management of Gérard and Chantal Perse, with old consulting knowledge from Saint-Émilion. Since then, the aim has been to create a distinctive Bordeaux here – with a clear signature and regional style.
The 2005 Sainte Colombe opens with notes of ripe black cherry, cassis and a hint of cedar wood. Powerful and concentrated on the palate, yet smooth thanks to silky tannins. Fine spice, subtle toasted aromas from the barrique and a long, harmonious finish underline its maturity and elegance.
The wine is aged for 15 months in barriques and is racked (soutiré) approximately every three months to remove coarse yeast.
The vines of Château Sainte Colombe thrive on a high plateau, the highest elevation in the Côtes de Castillon. The clay and limestone soils with excellent drainage provide ideal conditions for Merlot and Cabernet Franc to produce concentrated, powerful and at the same time elegant grapes.
