Its robust structure pairs superbly with red meat, game and mature cheeses. It is a particularly fine accompaniment to roast quail with herb jus, saddle of venison with wild mushrooms or a cheese platter featuring tangy Valais alpine cheese.
Founded in Sion in 1858, Charles Bonvin is the oldest wine house in Valais. The company recognised early on the value of its own vineyards and of those indigenous varieties that are rarely found outside the canton. With its ‘Nobles Cépages’ range, Bonvin puts precisely these Valais specialities centre stage, giving them a platform that is both true to the variety and contemporary.
Intense dark red with violet highlights. On the nose, black cherries, blackberries and red berries combine with spicy, slightly herbaceous notes. When young, the Valais Cornalin is spirited, firm and tannic. As it matures, it gains suppleness, finesse and aromatic depth.
Two-thirds of the wine is aged in stainless steel tanks and one-third in wooden barrels.
The grapes come from selected, warm Valais vineyards where this late-ripening variety reaches full maturity. The dry climate, intense sunshine and stony soils enhance the dark fruit, distinctive structure and typical spiciness of the Cornalin.
