The crazy creation

Folissimo

AOC Valais
The idea for this wine was born one evening with representatives of fine dining from Zermatt and Saas-Fee. The initiators are still immortalized on the label today. Turn it upside down, and it reveals the Matterhorn; turn it further, and the Allalin, the home mountain of Saas-Fee, appears. The mystical female figure represents Diego Mathier's wife and his five daughters.

    Wine history
    chevron-down

The quirky wine creation from Mathier was born one evening during a cozy gathering with representatives of fine dining from Zermatt and Saas-Fee. The name Folissimo is derived from the French word "la Folie," meaning madness. A bold creation of Cabernet Sauvignon and Merlot, crafted for special moments of enjoyment.

    Tasting note
    chevron-down

Intense garnet-red color with violet reflections. On the nose, a complex spicy note with hints of licorice, tobacco, and black fruits. Wild and sensual, the masculinity of Cabernet Sauvignon blends with the velvety tannins of Merlot on the palate.

Full of charm, harmony, density, potential, and power, with a long finish that can stand up to the best wines in the world. The quality of the tannins, the extended aging in oak barrels, and the beautiful harmony give this blend excellent aging potential.

    Vinification
    chevron-down

Maceration, extraction, and alcoholic fermentation in Vinimatics. A long second fermentation in new French oak barrels. The single-variety wines mature for 24 months in these barrels. The assembled wines then undergo an additional 12 months of aging in new oak barrels.
