Ideal as an aperitif, with summer salads, light starters and fish. Particularly lovely with herb-crusted trout fillet, prawn cocktail or a salad with strawberries, fresh goat’s cheese and toasted nuts.
Cave de La Côte was founded in 1929 by winegrowers from the Morges region and is today one of the defining wineries of Vaud. Around 300 winegrowers cultivate over 450 hectares of vines between Lausanne and Geneva – right in the heart of the La Côte AOC region. The Bertrand de Mestral range features selected plots on Lake Geneva and typical Vaud varieties with an accessible, clear profile.
A delicate rosé with coppery highlights. On the nose, strawberry, raspberry, ripe quince and delicate floral notes. On the palate, fresh, soft and harmonious, with delicate acidity, a light structure and an elegant, fruity finish.
The Œil de Perdrix is made from Pinot Noir and vinified as a pale rosé. The short maceration period gives it its delicate colour and subtle red-berried fruit.
The grapes come from selected plots in the La Côte region on Lake Geneva. The mild climate, proximity to the lake and diverse soils ensure freshness, fruitiness and an elegant rosé style.
