The Spiezer Seilschaft pairs well with rich fish dishes, white meat and heartier vegetable dishes. It harmonises particularly well with pan-fried turbot, guinea fowl in a cream sauce, veal strips or a pumpkin quiche; white asparagus with butter is also an excellent match.

The Rebbau Spiez Co-operative was founded in 1927 and upholds the centuries-old wine-growing tradition between Lake Thun and the Niesen. Ursula Irion has been at the helm since 2013, working with her team to develop distinctive wines inspired by the lake, the mountains and the peaks. The Spiezer Seilschaft forms part of the estate’s premier wine range and combines sustainable viticulture with innovative winemaking.

Apricot, mirabelle plum, passion fruit and citrus fruits characterise the multi-layered bouquet, complemented by verbena, vanilla and subtle toasted notes. On the palate, this white wine is juicy, complex and creamy, yet at the same time fresh and precise. Its elegant body, subtle spice and long finish give it excellent ageing potential.

Vinification

After a short maceration period, the grapes are pressed and the musts are fermented separately in barriques using spontaneous fermentation; part of the Sauvignac is fermented on the skins. Following natural malolactic fermentation, the wine matures for several months in barriques on the fine lees and is occasionally stirred on the lees.

The grapes grow in the Spiez vineyards between Lake Thun and the Niesen, where the mild lakeside climate meets cool alpine influences. Well-sun-exposed slopes and moraine soils formed during the Ice Age promote ripe aromas, fresh acidity and a pronounced structure.
