The Spiezer Souvignier Gris pairs very well with light, fresh cuisine, freshwater fish, chicken, leafy salads and semi-mature cheeses. Particularly lovely with pan-fried pike-perch with lemon butter, herb-crusted chicken breast or a summer salad with apple and nuts.
Spiez’s Alpine wine culture is closely linked to the landscape between Lake Thun and the Alps. Its wines are produced on steep slopes, characterised by a mild lakeside climate, alpine influences and glacial moraine soils. The wine cellar is located within the walls of Spiez Castle, the oldest parts of which date back to the 10th century; the current Rebbau Spiez cooperative was founded in 1942.
An elegant, fresh Swiss white wine with aromas of mirabelle plum, citrus, lime and green apple. Lively and crisp on the palate, with delicate fruit sweetness, fresh acidity, a subtle hint of bitterness and a lingering, appetising finish.
The wine is vinified to emphasise freshness, elegance and clear fruit. Souvignier Gris is also well suited to ageing in large wooden barrels, as the variety offers structure and tension.
The grapes are grown in Spiez on Lake Thun, where steep vineyards, proximity to the lake and alpine air combine. The glacial moraine soils lend the wine freshness, tension and a clear, mineral-driven profile.
