The Dézaley vineyards, established more than 800 years ago, have been the core of the Dubois family’s winemaking craft since 1927. This tradition is now carried on by the third generation. In 2005, Frédéric and Grégoire took over the management of the estate. The wines mature in the historic cellars of "Petit Versailles," a building dating back to the early 19th century.
This vibrant ruby-red wine reveals a spicy and aromatic bouquet with scents of ripe red fruits. When young, it offers a slightly rustic character, with peppery notes and a lively, expressive acidity. Over time, it develops silky tannins and flavor nuances reminiscent of cherries or plums, depending on the vintage.
The vinification follows the principles of integrated production. The grapes are carefully hand-picked between late September and mid-October. After pressing, the wine undergoes a second fermentation and then matures for approximately ten to twelve months in large wooden barrels. The label ensures its authenticity.
The grapes come from the terraced vineyards of Lavaux.
