Mature soft and blue cheese, sweet dishes, and fruits. Perfectly paired with freshly baked Valais walnut tart, and equally delightful with aged Vacherin Mont d'Or and pear bread.
The ruby is not only regarded as the stone of life and guardian of love but also as a symbol of power, bravery, and dignity. It is no surprise that its eternal flame makes it the gemstone of July, the peak of summer. In this month, the sun provides the vines with the necessary energy for photosynthesis, helping the grapes to ripen.
The ruby is also believed to possess magical powers, strengthening the heart and boosting sexual energy. That a good wine protects the heart is scientifically proven. As for sexual energy – the field is open for you to explore.
On the nose, it reveals complexity with aromas of white truffle and apricot, gently blended with a hint of undergrowth. This nectar is emotional and warm-hearted, developing a distinctive personality. Its power and dense structure, combined with soft tannins, give it a long-lasting finish.
Natural residual sweetness, with late harvest between December and January at 160-180° Öchsle. Fermented in new French oak barrels and aged on the lees, with the malolactic fermentation blocked.
Grown in the finest, slate-rich vineyards of Sitten, Lentine, and Batassé.
