This balanced assemblage perfectly enhances Italian dishes such as antipasti, mushroom risotto, or pasta with eggplant.
The Cave de Jolimont, located in Mont-sur-Rolle, is part of Château d'Allaman, owned by the Schenk company in Rolle. It focuses on storing and marketing wines from the Vaud region, particularly from the prestigious La Côte appellation, situated between Lausanne and Geneva. Its selection includes traditional wines from this area as well as modern creations, such as the popular brands Piacere and Ancora.
The color shines in a deep ruby red. The bouquet reveals aromas of ripe fruits, complemented by subtle woody notes. On the palate, it offers a harmonious, silky texture with a slightly sweet finish.
Produced using the traditional "Governo" method, which also serves as the foundation for the renowned "Ripasso" wines from Veneto. In this process, 90 percent of the grapes are vinified conventionally, while the remaining 10 percent are dried separately. By late November, they are pressed and, after fermentation begins, added back to the main wine.
The vines are cultivated in the La Côte appellation, a prestigious wine-growing region situated between Lausanne and Geneva.
