The Château Chasse-Spleen 2021, with its deep garnet color and complex bouquet of red fruits, mint, and curry notes, pairs wonderfully with dishes such as braised lamb rack and wild game stew. The fine, almost chalky tannins and elegant finish enhance the flavors of a beef filet in red wine reduction or venison goulash. With its balanced strength and smoothness, it complements rich dishes without overpowering them.
Viticulture on the site of today’s Château has been documented since 1560. Known since the 16th century as Salles de Poujeaux, the vineyards were once part of Château Latour. Until the early 19th century, the area belonged to Château Grand-Poujeaux, owned by the Gressier family. On July 18, 1806, André Castaing, who had built his wealth through trade in the Caribbean, purchased the expansive Grand-Poujeaux estate. In 1820, an initial inheritance division took place, from which Château Chasse-Spleen eventually emerged.

Initial nose: A bouquet of red fruits mixed with fresh minty notes, curry spice, and blossoming linden.
After swirling: Aroma of blackcurrant and morello cherry over a mineral base.

Smooth on the palate, with power but without excessive opulence.
The tannins are fine, delicately woven, almost chalky.
Long finish with a lot of elegance.
After hand-harvesting, the grapes are swiftly transported to the press house, where they are carefully sorted and gently crushed. Fermentation then takes place at controlled temperatures in stainless steel tanks, concrete vessels, and small wooden barrels. Once fermentation is complete, Chasse-Spleen Moulis-en-Médoc continues to mature on fine lees for an additional 18 months, enhancing its harmony.
