Château Pontet-Canet 2007 pairs perfectly with lamb ragout with chickpeas and dried figs, stuffed bell peppers, or vegetable couscous with beef meatballs.
Jean-François de Pontet was an aristocrat and high-ranking official who helped shape the new, expansive Médoc. After a career in Versailles as Grand Chamberlain to Louis XV, he settled in Guyenne and became Governor of the Médoc. In 1705, he consolidated several acres north of Pauillac to establish a vineyard and acquired an estate in Canet in 1757. Following the custom of the time, he combined his name with that of the estate, creating Château Pontet-Canet in 1781. Over nearly three centuries, the château has had only three owning families – a remarkable stability and uniqueness in the Médoc.
Very deep color. The nose captivates with intense aromas of black and red fruits, along with a refined minerality characteristic of Pontet-Canet's recent vintages. On the palate, the wine opens fully before evolving into a delicate, subtle development, maintaining its distinctive tannin strength. The length is impressive, with tactile sensations lingering in the mouth. The tannins are no longer velvety but pointed. A superb wine that once again highlights the exceptional quality of the Pontet-Canet terroir.
Manual sorting and destemming. Alcoholic fermentation with native yeasts, four-week maceration with gentle cap submersion, malolactic fermentation in tanks. Aging for 16 to 18 months: 50% in new barrels, 35% in concrete amphorae, and 15% in one-wine barrels.
50-year-old vines that grow on gravel soils from the Quaternary period.
