Pairs perfectly with dishes featuring dark meat, such as pot roast, and is an excellent match for poultry like guinea fowl, pigeon, or duck.
In the 1980s, Guido Brivio launched his own wine brand and formed a close partnership with the renowned Gialdi winery, which was already specialized in vinifying grapes from the Sottoceneri region. Brivio wines primarily focus on grape varieties from southern Ticino. In 2001, Gialdi Vini SA acquired Brivio Vini SA, expanding the range to include wines from northern Ticino.
The expressive bouquet captivates with a variety of aromas: ripe black berries such as blackberries, complemented by hints of menthol and roasted notes like white cocoa and walnut. On the palate, it is fresh and fruity with a solid structure. The tannins are of remarkable finesse and quality. The finish is long, persistent, and perfectly harmonious.
The vinification follows a traditional method in stainless steel tanks, with maceration lasting 12 to 15 days at temperatures between 28 and 32°C. The wine is then aged for 12 months – 85% in new barriques and 15% in one-year-old barriques. The two grape varieties are vinified separately, and the final blending takes place shortly before bottling. Frequent racking off the lees allows bottling without fining, cold stabilization, or filtration. This gentle process may result in a fine sediment in the bottle, a mark of careful handling.
Exceptional vineyards in Ticino, where the soil and climate are perfectly aligned with the needs of Merlot, providing ideal conditions for its growth.
