Champagne Mandois Cuvée Brut Origine is a versatile accompaniment to food. It is excellent as an aperitif, but also reveals its full potential at the table. It goes particularly well with gougères with Mimolette cheese or a creamy porcini velouté with mascarpone. Its fresh, balanced character also harmonises wonderfully with seafood such as lobster or crab, spicy charcuterie, fried foods such as calamari and fine vegetables. A champagne that can be enjoyed on its own or as an accompaniment to food – with ease and style.

The Mandois family has been running its champagne house in Pierry for nine generations. Their 35-hectare vineyard, most of which is certified organic, combines maximum sustainability with a respectful approach to nature.

 The philosophy combines tradition – such as manual harvesting and long maturation – with innovation such as precise vinification and modern cellar technology. People are at the heart of everything: the long-standing, family-like team, who work in changing roles, develop themselves further and together uphold the quality and ethics of the house.

In the glass, the champagne is pale yellow with silvery reflections. The nose is initially dominated by aromas of white stone fruit, especially peach and apricot. With a little air, delicate notes of honey and roasted hazelnuts develop. The palate is fresh on the attack, followed by a full, smooth texture with fruity and slightly pastry-like notes.

Vinification

90% of the vinification takes place in stainless steel tanks and 10% in wooden barrels. The dosage is 7 g/l, giving the champagne a fine balance between freshness and fullness.

The grapes for the cuvées come from the best vineyards in Champagne: Chardonnay unfolds its elegant expressiveness above all in the Côte des Blancs, Pinot Meunier draws its character from the fertile soils of Pierry, and Pinot Noir from selected plots complements the profile with fine depth.
