Perfect as an aperitif, with appetizers, seafood, shellfish, poultry, rabbit, and hard cheeses. Especially delicious with oven-baked sea bream, flavored with thyme sprigs and lemon wedges.
The name of this ancient Valaisan grape comes from Latin, leading to the belief that it originated from the Roman Empire and found its way to Valais thanks to the legendary Roman Emperor Julius Caesar. Caesar sent his army to conquer Valais to ensure a lasting connection between Rome and Avenches.
However, Caesar's legions did not bring only war and misery to the Rhône Valley; they also introduced early civilization, including reading and writing, along with fruit trees and vines, from which the region benefited.
The complex aromas of the wine evoke ripe fruits, dominated by notes of rhubarb compote and grapefruit. On the palate, it develops a balanced and intricate structure, with a pleasant, ripe acidity and the characteristic salty finish.

This flavorful wine is grown in the sun-drenched hamlet of Molignon, above the town of Sion. The predominant shale rock, locally known as "brisier," translates to "break."
The clay shale rocks resemble layers of puff pastry and are responsible for the soil's high mineral content, which gives the wine its distinctive fruitiness and minerality.
