Pairs well with poultry, veal, pork, and beef, as well as game and cheese. Especially delightful with venison dry-cured meat on fresh rye bread.
This Pinot Noir is dedicated to Oskar Mathier, Diego Mathier's grandfather, in recognition of his life's work for future generations.
Not only did Oskar Mathier store his first 12,000 liters of Valais wine where today’s Restaurant Barrique stands, but he also built a modern winery for the time next to the current cellar, which still serves as a reception area for grapes. With his vision and dedication, he significantly shaped the development of the Mathier winery in his own unique way.
The fingerprint on the Pinot Noir Non Filtré label symbolizes this individuality and represents the wine itself. Unfiltered and without barrel aging, this Pinot Noir showcases the Salgesch terroir in an authentic and distinctive manner. A multiple-award-winning, noble Pinot Noir from Salgesch.
A beautiful, intense strawberry red in the glass with a spicy nose of ripe cherries and cassis. The fermentation aromas are still nicely present. On the palate, it offers a fruity start with fine tannins that develop pleasantly. All in all, the non-filtré is harmonious and balanced, fully expressing the fruitiness of Pinot Noir. Lovers of young drinkable wines will enjoy this one, as it can be savored after just one to two years.
Multiple rackings (four to five times) instead of filtration, with natural clarification through repeated racking. No use of intensive pressing techniques – a vinification method reminiscent of grandfather's time. A natural sediment may form at the bottom of the bottle.
The way in which Pinot Noir wines reflect the terroir in which they grow is almost unmatched among grape varieties. It is no coincidence that Pinot Noir is known as the king of red wines. Even the most expensive wines in the world are made from Pinot Noir grapes. The best Pinot Noir wines thrive on limestone soils, and this holds true for this Pinot Noir from Mathier, cultivated in the finest Salgesch vineyards on barren, highly calcareous and magnesium-rich soils.
