Its smoothness and robust body make it an excellent choice for dishes with intense structure, such as stews, braised meats, game, or red meat. It also pairs wonderfully with aged hard cheeses, especially when served with jams.
At a time when the Belle Époque brought elegance and lightness to Verona, Giacomo Battista Tommasi married Augusta in 1902 and joined her family. While continuing to cultivate the lands in Valpolicella, Giacomo quickly realized that wine is much more than just a drink: he saw it as a refined experience for special occasions and social gatherings.
Though two world wars delayed his dream, his children carried on his legacy with dedication. They shaped the development of the Pedemonte community, where the family still lives today, passionately preserving the tradition of winemaking.
On the nose, it reveals a deep ruby red with aromas of ripe cherries and plums, complemented by subtle floral and ethereal notes. On the palate, it is full-bodied and well-structured. The softness of the tannins enhances the richness of the fruit, which is harmoniously balanced by a spicy and persistent finish.
The grapes are dried for about three months in specialized drying crates. Fermentation takes place over 20 to 25 days in stainless steel tanks at controlled temperatures of 25 to 30°C. The wine is then aged for three years in 35 hl Slavonian oak barrels.
The grapes come from the winery's vineyards, nestled in the gentle hills of the Valpolicella region. The soil is a blend of limestone, clay, and silt, shaped by unique microclimatic conditions.
