Ideal with braised beef, leg of lamb with herbs or game dishes. Strong cheeses such as Comté or mature Gouda are also perfect accompaniments.
Domaine Chante Perdrix was founded in 1896 by Etienne Pécoul and is now in its third and fourth generation under the management of brothers Frédéric and Franck Nicolet. Year after year, they work with passion and family cohesion on around 18 hectares of vineyards in the southern part of Châteauneuf-du-Pape. Old Grenache vines, traditional methods and the selection of sites with pebbles (galets) characterise the style – powerful, smoky, sun-drenched and at the same time balanced.
The Châteauneuf-du-Pape from Domaine Chante Perdrix shines in an intense ruby red. The nose reveals ripe berry aromas, while the palate combines fruity richness with balanced acidity and noticeable tannins. The long, velvety finish rounds off the experience harmoniously.
The grapes are harvested by hand. The must first matures for two to six months in French oak barrels before the wine is aged for a further 13 months in barriques – 30% in new barrels and 70% in used barrels.
The Pinot Noir vines for this reserve grow in the thermal region on the Badnerberg on loamy sandy soil – a terroir that combines elegance with power and gives the wine its distinctive character.
