Perfect with braised lamb, entrecôte or game. It also shows its full class with roasted vegetables, Mediterranean oven dishes or mature hard cheeses such as Comté.

Wine history
chevron-down

The Domaine Château Simian in northern Châteauneuf-du-Pape looks back on five generations of family history. From humble beginnings in the 19th century, it has developed into a winery that combines tradition and modernity. Certified biodynamic according to Demeter since 2011, the estate produces wines with character that harmonise nature, terroir and passion – supported by the Serguier family and its new generation.

Tasting note
chevron-down

Les Grandes Grenachières d'Hippolyte Bio presents itself in a deep garnet red with purple reflections. The nose reveals notes of morello cherry, blackberry, cocoa and baked apple, accompanied by a subtle spiciness. On the palate, it is powerful and dense, with polished tannins, ripe fruit and a hint of mocha. Its long, elegant persistence makes it an exceptional Châteauneuf-du-Pape.

Vinification

The grapes come from ancient Grenache vines planted by Hippolyte Serguier between 1880 and 1948 in the northern terroirs of Châteauneuf-du-Pape in Palestor and Cabrières – a living heritage in the vineyard.
