An excellent accompaniment to spicy dishes, blue-veined cheeses and desserts that are not too sweet. Particularly delightful with foie gras on brioche, Roquefort with pear compote, tarte Tatin or an almond tart with poached apricots.
Louis Roederer was founded in Reims in 1776 and remains one of the few major Champagne houses that is still independently family-owned. Ever since Louis Roederer took over the management in 1833, the house has consistently relied on its own vineyards and a precise understanding of its terroirs. Today, the family cultivates around 250 hectares in the most prestigious sites of Champagne. Carte Blanche draws on the opulent champagnes of the 19th century and reinterprets this historic style with freshness, precision and modern balance.
A brilliant golden-yellow colour with a fine, lively perlage. The bouquet combines baked apple and ripe white fruits with jasmine, honey, almond, hazelnut and a hint of frangipane. On the palate, it is rich and creamy, yet fresh and precise, with delicately integrated sweetness and a long, mineral-driven finish.
The cuvée combines the current harvest with selected reserve wines; around 7 per cent of the wines are aged in wood. After approximately three years’ maturation in the cellar, the champagne rests for a further six months following disgorgement and is dosed at 38 g/l.
The grapes come in equal parts from the three historic appellations: La Rivière, La Montagne and La Côte. Roederer’s own vineyards are complemented by selected plots from long-standing partners in the ‘heart of the terroir’.
