‘The Witch's Tower’ – inspired by the ancient legends of Sion, where magic and history have intertwined for centuries. The tower, the last witness to times gone by, still carries the whispers of those nights when the witches met there. In the Cave de l'Hospice de Salquenen, Diego Mathier revives this spirit: wines that combine power and clarity, full of depth, energy and quiet mysticism. They are an expression of a Valais terroir that has shaped generations – a place where craftsmanship, passion and history merge into a new magic.
This wine is dark garnet red in colour. On the nose: elderberry jelly and a hint of undergrowth. On the palate, a fine-grained tannin structure unfolds with black berries and moderate spice – powerful, yet elegant and with a long finish.
The wine is aged in stainless steel tanks.
The vines grow in the sun-drenched hamlet of Molignon above Sion on the characteristic clay slate (‘brisier’) – a soil full of minerality that gives this wine its cool freshness and fine structure.
