A characterful partner for hearty Sicilian cuisine, grilled dishes and mature cheeses. It pairs particularly well with Pasta alla Norma, grilled lamb or mature Pecorino.
Colomba Bianca was founded in 1970 in the province of Trapani and has developed into one of Sicily’s important wine cooperatives. Around 2,480 members cultivate approximately 6,800 hectares of vineyards. With its Resilience range, the winery places particular emphasis on old vines and indigenous Sicilian grape varieties.
Vibrant ruby red with brick-red reflections. The nose reveals wild berries, wild strawberries and raspberries, complemented by orange peel, oriental spices and a delicate hint of vanilla. Warm and enveloping on the palate, with pleasant tannins, spicy pepper, subtle salinity and a long, raspberry-driven finish.
After two weeks of temperature-controlled maceration and fermentation, part of the wine matures in barriques for six months, while the remainder is aged in stainless steel tanks. The two components are then blended and refined in the bottle for a further four months.
The grapes come from the Val di Mazara in western Sicily, particularly from old vineyards in the Valle del Belìce at elevations between 100 and 300 metres above sea level. The vines, some up to 50 years old, grow on calcareous soils and are cultivated organically.
