The Château Pichon Baron winery, classified as a Deuxième Grand Cru Classé in 1855, is one of the historic references in Pauillac. Since its acquisition by AXA Millésimes, the estate has been modernised both architecturally and vinologically. With great care in the selection and cultivation of the plots, the aim is to embody the essence of this domaine terroir in every vintage.

The colour is a deep ruby with a black core. The nose is dominated by dark berries such as cassis and blackberry, accompanied by delicate notes of black tea, cedar wood and spices (white pepper, bay leaf). On the palate, the wine reveals dense tannins, pronounced fruit sweetness, fine minerality and structured acidity – with great length and an elegant finish.

Vinification

Maceration takes place at moderate temperatures (approx. 25–27 °C), with extraction particularly in the middle of fermentation and subsequent post-fermentation maceration, accompanied by daily sensory checks. Maturation takes place over approximately 18 months in oak barrels (approx. 70% new wood) and other barriques from the same vintage.

The plots thrive on gravelly, nutrient-poor soils with good drainage, which favour water balance control. The historic ‘Butte de Pichon Baron’ in particular supplies grapes for the Grand Vin.
