Ideal as an aperitif, with seafood, fish, white meat or delicate starters. Particularly well-suited to scallops, trout tartare, chicken in lemon cream sauce or a mild goat’s cheese.
Domaine Les Hutins in Dardagny has been run by Emilienne Hutin Zumbach since 2008, supported by her father Jean Hutin. The family has shaped Geneva’s winegrowing for generations and focused early on quality, lower yields and new grape varieties. Today, 19 hectares of vines produce distinctive, multi-award-winning wines.
Delicate, lively effervescence. On the nose, clearly characterised by Chardonnay, with fresh fruit, stone fruit, apple notes and a hint of herbal spice. On the palate, fresh, vinous and elegant, with lovely roundness, a fine mousse and a mineral, chalky finish.
The wine is vinified using the traditional method with a second fermentation in the bottle. The Chardonnay base lends it freshness, structure and a particularly fine perlage.
The grapes are grown in the Geneva wine-growing region around Dardagny in the Mandement. The sites benefit from limestone and molasse-dominated soils, good aeration and a climate that combines freshness and ripeness.
