Beychevelle loves dishes with roasted aromas, structure and subtle herbs that complement its cool precision without weighing it down. Veal loin with morel cream and potato gratin or – as a fine alternative – guinea fowl supreme with jus, polenta and rosemary are very harmonious pairings.
The name Beychevelle comes from ‘baisse voile’ – the ships lowered their sails in honour of the admiral who resided here. As a 4ème Grand Cru Classé, the château has stood for St-Julien finesse for centuries; today, careful parcel work, modern cellar technology and a comprehensively renewed ageing process characterise its style: clarity, balance and contemporary precision.
Dark ruby with a violet rim. On the nose, cassis, black cherry and blackberry, flanked by violets, cedar wood, fine graphite, tobacco leaf and a hint of dark chocolate. On the palate, medium to full-bodied with juicy fruit, fine-grained, ripe tannins and cool freshness. The finish is long, precise and mineral, with a spicy aftertaste.
Selective hand harvesting, triple sorting and temperature-controlled fermentation by plot with moderate extraction; followed by around 18 months of ageing in French oak with a high proportion of new barrels to refine the structure and length.
The vines are planted on Garonne gravel terraces with gravelly-clay subsoil not far from the Gironde. The excellent drainage and the moderating river climate promote deep roots, cool ripening and the characteristic graphite-like character in the wine.
