Excellent with rack of lamb with herb crust or veal fillet with morel cream sauce. Also excellent with game birds or roasted duck breast with celery purée – dishes that highlight its structure and finesse.
The château is owned by the von Neipperg family, who have been involved in viticulture since the 18th century and have shaped the development of Canon La Gaffelière since the 1980s. Stephan von Neipperg has consistently focused on sustainable cultivation, biodiversity and gentle cellar work. Under his leadership, the estate has become a prime example of the modern, terroir-driven Saint-Émilion style – characterised by balance, clarity and structure.
Dark ruby red with violet hues. On the nose, notes of black cherry, cassis, plum and violet, accompanied by subtle spice, cedar wood and a hint of tobacco. Harmonious, juicy and focused on the palate, with fine-grained tannins and elegant length. The wine shows depth and tension without losing its silky texture – an example of the art of controlled intensity.
Strict hand-picking and selection by plot, gentle extraction during fermentation, followed by ageing for around 16 to 18 months in French barriques, a high proportion of which are new. The aim is to preserve freshness, clarity and aromatic purity.
The vines grow on the southern slopes of Saint-Émilion on soils of clay, sand and limestone. This combination gives the wine its balanced blend of warmth and freshness – and the unmistakable expression of elegance and depth for which Canon La Gaffelière is renowned.
