Pairs excellently with duck breast with cherry jus or rack of lamb with herbs. Also harmonious: mushroom risotto with porcini mushrooms or a mature Gruyère AOP.
Château l'Arrosée, known since the 19th century, is located on the slopes opposite the Saint-Émilion cooperative, not far from Ausone. After a renaissance in quality under the Caille family (from 2002), the estate passed to Domaine Clarence Dillon (Quintus) in 2013; the historic name recalls a spring on the hillside.
Cherry and red berries, accompanied by smoke, earth and a hint of cedar wood. Finely woven on the palate, ‘delicate but not light’: juicy core, silky ripe tannins, precise acidity and chalky tension. Cherry liqueur, graphite and an elegant, dry finish in the aftertaste.
Hand-picked, temperature-controlled fermentation (mostly concrete). Aged for around 12–18 months in 100% new French barriques; partially bottled unfiltered and unfined.
9.5–10 hectares on the western and southern Côtes of Saint-Émilion: sunny, wind-protected limestone and limestone-loam slopes with patches of sandier topsoil at the foot – a terroir that combines freshness, finesse and structure.
