Excellent with classic boeuf bourguignon, leg of lamb with rosemary or game birds. A mature cheese such as Saint-Nectaire or a strong Comté also emphasise its character.

Wine history

Château Les Ormes de Pez looks back on a history dating back to the 18th century. It owes its name to the elm trees (‘ormes’) that once characterised the village of Pez. Since 1940, it has belonged to the Cazes family (Château Lynch-Bages), who have continuously developed the estate. Today, it stands for an authentic Saint-Estèphe with tradition and modern appeal.

Les Ormes de Pez combines the powerful structure of Saint-Estèphe with inviting fruit. The nose is dominated by cassis, blackberry and cherry, complemented by spicy and slightly earthy notes. On the palate, it displays fullness, firm tannins and freshness, leading to a long, harmonious finish.

Vinification

The grapes are harvested plot by plot, followed by temperature-controlled fermentation in stainless steel tanks. The wine is then aged for around 15 months in French barriques, some of which are new. The aim is to bring out the fruit, structure and terroir typicity in a balanced way.

The vineyards cover around 40 hectares and are located on the typical gravelly hills of Saint-Estèphe. Underneath the gravel are clay and limestone layers that store water and give the vines strength during dry summers. Cabernet Sauvignon dominates, complemented by Merlot, Cabernet Franc and Petit Verdot – a classic Bordeaux blend that combines elegance and strength.
