Lamb and beef, game dishes, and aged cheese. Delightful with a lamb loin in port wine sauce accompanied by glazed chestnuts.
The Cornalin grape, also known as Landroter, is demanding in the vineyard. In the mid-20th century, combined with the phylloxera crisis in Europe, this nearly led to its disappearance in Valais and throughout Switzerland. However, due to its high quality and the unique character of this oldest Valais wine specialty, the grape experienced a true revival in recent decades.
Intensive work in the vineyard and cellar has been a part of Adrian Mathier’s life, the father of Diego Mathier. His hands on the label not only serve as a reminder of the labor-intensive and unpredictable nature of Cornalin but also symbolize Adrian’s role as a hands-on winemaker. Throughout his life, he has created and achieved much, shaping the Mathier winery through his hard work.
In the glass, the Cornalin displays a beautiful garnet red color with cherry-red highlights. The bouquet is open and floral, with accents of wild berries and acacia blossoms. On the palate, it is smooth and warm, with a fruity character and a hint of licorice. The well-integrated tannins are complemented by the wine’s distinctive yet refined nature.
Destemmed grape harvest. Controlled alcoholic fermentation in Vinimatics. To preserve the delicate aromas of Cornalin, it is aged partly in stainless steel tanks and partly in barrels for 15 to 18 months.
Grown on soils rich in limestone and magnesium in Salgesch.
