Mature hard and soft cheeses, sweet dishes, and pastries. Irresistible when paired with a classic "Crêpe Suzette," a flambéed pancake drizzled with a few drops of our fine assemblage.
Topaz is a gemstone with an incredible variety of colors. Its Greek name is tied to a romantic story. Shipwrecked pirates are said to have discovered the stone on a mythical island in the Red Sea – Topazos, meaning "sought and found."
Topaz is the birthstone of November. During this month, the vine rests after the harvest, and the winter slumber begins. The vibrant colors of topaz resemble the fading autumn. In the cellars, the wines of this blend ferment, and an incredible aroma hints at promising delights.
Delicate sweet wine with an intense nose of exotic fruits such as mango, pineapple, and lychee. Mild yet invigorating on the palate. A true delight thanks to its intense fruit, the presence of residual sugar, and a beautiful acidity. A touch of tannins accompanies the long-lasting finish of this rare wine.
Natural residual sweetness, with a late harvest in November at a minimum of 140 Öchsle. Fermented in new French oak barrels and aged on the lees in the Rhône Glacier. Malolactic fermentation is blocked.
Grown in the finest vineyards of Siders, Sitten, and Chamoson. The Malvoisie, Ermitage, and Johannisberg are the perfect blend for this glacier wine.
