The roots of Domaine J. Moreau & Fils date back to 1814, when Jean-Joseph Moreau took over one of the oldest wineries in the Chablis region. Over generations, the winery grew to become one of the most respected producers in the appellation. Today, characterful Chardonnay wines are produced here in the best locations, elegantly reflecting their origin and history.
Clear, light golden colour in the glass. Expressive aromas of mandarin and pineapple unfold on the nose, accompanied by a subtle hint of fresh almonds. On the palate, the wine is characterful and well-balanced, with pronounced minerality and a lingering, slightly salty finish.
The grapes are slowly and gently processed in a pneumatic press to preserve their aromas. Fermentation then takes place at a controlled temperature of 18–20°C in stainless steel tanks. The wine is then aged for eight months in oak barrels, where it gains depth and structure.
The climate in Chablis is closer to that of Champagne than the rest of Burgundy: cold winters, late frosts in spring, warm summers and a mild autumn characterise the region. The vines are rooted in poor, chalky soils with a high marl content – a combination that gives the wine its distinctive freshness and minerality.
