Culinary recommendation

This Tuscan red wine is a versatile companion to a wide range of dishes. It pairs particularly well with pasta dishes featuring game sauce, such as Pappardelle al Cinghiale, as well as roasts or aged cheeses. Even light appetizers with bold flavors are beautifully complemented by this wine.

Wine history
chevron-down

The Poggio Mandorlo project began in 2001 as a dream of friends Roberto, Felice, Giuseppe, and Fabio to celebrate their homeland through exceptional wines. Guided by renowned winemakers Roberto Cipresso and Filippo Paoletti, the estate in the Montecucco DOCG region came to life. Spanning 94 hectares, it grows Sangiovese, Merlot, and Cabernet Franc under ideal conditions. Sustainable winemaking using local materials ensures minimal environmental impact. Poggio Mandorlo is renowned for elegant, structured wines like “Il Guardiano” and “La Querce,” as well as the award-winning Super Tuscans Poggio Mandorlo and Ombre. The estate blends tradition, innovation, and respect for nature.

Tasting note
chevron-down

Deep ruby red with hints of violet. The nose reveals aromas of red fruits and floral notes, perfectly balanced by subtle hints of wood. The tannins are dense, silky, and long-lasting in the finish.

Vinification
chevron-down

Fermentation takes place in stainless steel tanks at a carefully controlled temperature of 22 to 24°C, with multiple daily pump-overs. Maceration lasts between 18 and 21 days. The wine then matures for 30 months in large wooden barrels and tonneaux.
