A champagne for precise, high-quality cuisine. Superb with langoustines in citrus butter, scallops with caviar or pink-roasted duck breast with raspberry jus; white truffle and mature Comté also bring out its complexity to great effect.
Louis Roederer was founded in Reims in 1776 and remains one of the few major Champagne houses that is still independently family-owned. Cristal was created in 1876 for Tsar Alexander II; just under a century later, in 1974, Jean-Claude Rouzaud created Cristal Rosé. To do so, he selected old Pinot Noir vines from the finest Grand Cru plots in Aÿ and combined their ripe fruit with the chalky precision of Chardonnay. Today, this biodynamically produced prestige cuvée ranks among the rarest and most sought-after rosé champagnes in the world.
A delicate pink with coppery highlights and the finest, persistent perlage. The bouquet combines redcurrants, wild raspberries and cassis with sweet spices, a hint of smoke and undertones of undergrowth. On the palate, it is initially silky and generous, then taut, salty and full of energy. The long finish brings together red fruit, chalky freshness, iodine and subtle spice.
Using the house’s own infusion method, Chardonnay must is added to the gently macerated Pinot Noir and fermented together. 19 per cent of the base wines are aged in wood; malolactic fermentation is not carried out; the dosage is 8 g/l.
The Pinot Noir comes from old vines in selected Grand Cru plots in Aÿ, whilst the Chardonnay comes from the chalk-rich premier cru sites of Avize and Le Mesnil-sur-Oger. Limestone and calcareous clay combine fully ripe fruit with crystalline acidity, salinity and exceptional ageing potential.
