Roast lamb, braised beef cheeks and foie gras variations harmonise particularly well with this wine. Also recommended: game dishes, duck with a fruity sauce, roast beef or mature hard cheeses such as Comté or aged Gouda. It also reveals its full charm with dark chocolate with spicy notes.
Since 2008, Alliance Minervois has brought together winemakers from five historic wineries – joined by Azillanet in 2012 – to form a strong community. An impressive variety of wines is produced on over 3,000 hectares of vineyards in 49 municipalities. The interplay of Mediterranean and oceanic climates, different soils and dedicated winemakers results in expressive wines with character and provenance.
This wine has a deep dark cherry red colour and an intense bouquet of ripe black fruits, black cherries, wine-soaked strawberries and delicate spice notes. Twelve months of ageing in new French oak barrels and low yields (30 hl/ha) give it fullness, a balanced structure and velvety tannins, rounded off by a refreshing hint of cedar wood.
Fermentation takes place using the carbonic maceration method, in which whole grapes ferment in the absence of oxygen. This process preserves the freshness of the fruit and gives the wine a particularly smooth texture and intense aromas.
