This wine is highly appreciated with sauced fish dishes, veal blanquette, or free-range capon. It pairs effortlessly with robust cheeses and works perfectly even after a red wine.
In 1559, Blaise Junod, Governor of Valangin, commissioned the construction of Château d’Auvernier. In 1603, Pierre Chambrier, an influential figure of his time, acquired the estate. The purchase included a vineyard of 19 fossuriers (approximately 7 hectares), which remains the core of the property to this day.
For more than 400 years, Château d’Auvernier has been in the hands of the same family. Over this time, the winery has produced wines of exceptional quality, celebrated both in Switzerland and internationally. Despite a turbulent history shaped by figures such as military leaders, regents, and statesmen, winemaking remains the essence and central purpose of the estate.
Grapes harvested at peak ripeness create a wine of remarkable richness and complexity. Its bright golden hue complements a dry, fruity character with a smooth, full-bodied texture. The finish is soft and velvety, making it a truly harmonious experience.
The grapes are carefully handpicked between late September and early October. After harvest, they undergo several hours of maceration on the press. Special emphasis is placed on including a portion of noble rot (Botrytis) berries in the harvest. Fermentation takes place at a controlled temperature of 18°C.
The Neuchâtel wine region, situated in the geological extension of Burgundy, provides excellent conditions for growing Pinot Gris grapes. The vines thrive on a terroir with moderately deep limestone soils and low clay content.
