A versatile starter for an aperitif or a festive meal. Particularly lovely with scallops in citrus butter, smoked salmon tartare or crispy pan-fried pike-perch; for dessert, it pairs excellently with a strawberry pavlova.
Since 1927, the Dubois family has been carrying on its winemaking tradition in the heart of Lavaux. Today, the third generation is already shaping the Les Frères Dubois estate, combining modern pressing and cellar techniques with ageing in the deep cellars of the historic Petit Versailles in Cully. Pleine Lune was created by this generation and first launched in 2013 – as a sparkling addition to the moon-inspired wine range.
A fine, lively perlage and a seductive bouquet of vineyard peach and rose petals, underpinned by subtle mineral notes. On the palate, it is fresh, racy and exceptionally refined, with gently rolling bubbles, lovely length and a crisp, fruity finish.
Only the free-run juice from gentle manual pressing is used and undergoes both alcoholic and malolactic fermentation. Secondary fermentation takes place in the bottle; after several months’ ageing on the lees, the wine is shaken and disgorged.
The Pinot Noir grapes grow in the terraced vineyards of Lavaux and are cultivated according to the principles of integrated production. The steep, sun-drenched slopes above Lake Geneva promote ripe fruit, freshness and a delicate mineral character.
